xmas pudding
Xmas Pudding
230g golden caster sugar
230g vegetarian suet
905g mixed dried fruits (sultanas, raisins, currants)
110g of mix orange, lime, lemon peel
110g plain flour
110g fresh breadcrumb
5 eggs
1 level tsp mix spice
5g nutmeg
pinch of salt
150ml rum
method
grease 4 pudding basins
mix together all the dry ingredients
mix the egg and rum well
spoon the mixture into the pudding basins. put baking paper over the top and tie with a string
place the pudding basin in a steamer or boiling water and cover and cook for 5 hours
cool
to serve with rum butter, rum and raisin ice cream or custard
