method
once the potatoes are boiled
place the tray in the oven with your chosen fat, once hot place your potatoes in the tray with the hot fat
roast in the oven for 20mins until golden and crispy. plus turn every 5 mins
remove from the oven and then place on a place with kitchen tissue to catch the oil on the plate
note; the amount of fat need for the potatoes (1.5kg maris piper potatoes, peeled to 100g)
not to cover the potatoes completely just enough to cover the surface.
you can place the herbs in the melt fat overnight and keep it out so it doesn't become solid in the fridge and just take it out when ready to cook
190ºC/375ºF/gas 5
